Happy New Year! 2022 has started and 2021 is over. If you want to eat more responsibly in this new year, this gingerbread cake is perfect for you. The cake is easy to prepare and ready in no time, not to mention the cake tastes delicious!
Ingredients
For 1 cake, spring form 20 cm
Dry ingredients
- 100 grams spelled flour
- 200 grams almond flour
- 2.5 tbsp gingerbread spices
- 1 tsp baking powder
- 0.5 tsp baking soda
- Pinch of salt
Wet ingredients
- 50 grams coconut blossom sugar
- 80 grams of melted coconut oil
- 60 ml almond milk
- 75 ml protein
- 1 ripe banana
- 4 medjool dates (pitted)
- 30 grams almond shavings
Preparation method
- Preheat the oven to 175 degrees. Line an 18 cm springform pan with baking paper.
- Blend the wet ingredients in a blender until creamy.
- Combine the dry ingredients in a mixing bowl. Stir well with a spoon.
- Add the mixture from the blender to the dry ingredients. Stir well with a spoon. The batter should stay a little thicker.
- Pour the batter into the springform pan. Smooth with a spoon and sprinkle the almond shavings on top.
- Bake in the preheated oven for about 40 minutes. Let cool completely before slicing the cake.
